01/11/08 - New Arrival!

Creative Crusts has just released a Parisienne Baguette, using the same formula and techniques as those used in France, this product is as authenentic as you will get. Baked traditionally on the sole of our new hearth oven, it has wonderful flavour and is fantastic for filled sandwiches.

01/10/08 - Bread for the Sole!

The level of excitemnent is hard to miss at Creative Crust at the moment with the arrival and instalation of our Bongard setter oven. Built in France it allows us to bake all our Artisan style breads straight onto the stone deck floor and gives our products amazing volume and a lovely crust. Arriving with the oven is our new retarder proofers, these will allow us to extend our proof times considerably and cold proof our sourdough giving it a very unique crust and beautiful moist crumb.  

01/09/08 - When in Rome!

Creative Crusts owner Brett Noy will again represent Australia at next years European Bread Cup in Riminni Italy. In addition to this honour Brett will this time captain Team Bakery Australia which will see him included into the International Judging Jury. Practice has begun and Brett will join the other members of the team in Melbourne this month for their next practice to further develop product design and competition time lines.

15/08/08 - Apprentice of the Year!

Creative Crusts apprentice,  Tim Dillon wins Brisbane Regional Apprentice of the Year (all trades)     

09/07/08 - New Sourdough - Walnut & Raisin

Creative Crust wish to announce the release of their latest sourdough creation, a Walnut and Riasin Sourdough. This sourdough is made using our Hunter Valley Rye Levain and is packed full of toasted californian walnuts and plump juicy raisins. This bread is fantastic as either a cheese bread, or would be brilliant as a breakfest toast, with a semi open texture and mild acidity, it will compliment any menu.

14/05/08 - Another Australian Artisan Cup Win!!

Creative Crust was crowned Australian Artisan Baking Cup (Artisan Sweet Yeast) Champion. The National competition was hotly contested and saw competitors from most states and included Australian team members Nick Davey and Scott Megee. Competitors were required to produce a range of products which included French Croissant, Danish Pastries, Brioche, Stollen, and a competitors choice item for which we did a beautiful Hazelnut Gugelhoph. This win follows on from Creative Crusts owner Brett Noy's win in the Artisan Bread version of the same event in 2007 and so see's Creative Crusts holding the two National titles simultainiously.

  

  • 15/ 04/08 - Europain & the Coupe du Monde de la Boulangerie in Paris

Creative Crusts owner Brett Noy attended Europain the international baking and patisserie exhibition in Paris France, the highlight of which was the Coup du Monde de la Boulangerie or World Cup of Bakery. Brett was able to catch up with many international contacts and spent time with Team USA members, gathering information and product ideas. The competition between the 12 international Teams was very intense and after all was said and done the French Team was announced as victors, they were closely followed by Taiwan and Italy, Team USA was only .5 of a point out of the placings. Another highlight was an invitation to the World Headquarters of ingredient manufacturer Puratos who were wonderful hosts and not only showed us their state of the art test baking facilities, but were kind enough to give a personal guided tour of beautiful Brussels.

 

  • 15 /03/08 - Get your Belguin Butter Croissants 

Creative Crusts launches their new belguin Butter Croissants, made with the worlds premium butter from Corman.  The taste flavour and aroma of these croissants is exceptional, and Creative Crusts are currently only one of two bakeries in Brisbane using it for the production of Croissants and Danish. These will provide a distinct point of difference and sales advantage for anyone stocking them, and also come in our Chocolate, Almond, and Danish range.   • 30/ 01/08 - Brett Noy and the Australian Baking Team Compete at Sigep in Italy

The Australian Baking Team competed strongly at the Sigep International Bread Cup in Rimini Italy, the team placed 6th overall and won the window display section of the event. Creative Crusts owner Brett Noy produced the Sydney Opera House out of bread dough for the National Monument section and it was clearly a crowd favourite judging by the public interest. In the days leading up to the competition the team was able to visit the headquarters of internationally renowned oven manufacturer Polin, and was treated to a day in their state of the art test facility working with local bakers learning the finer points of Italian bread making. They then travelled down to Parma to spend time with mixer manufacture Tonelli and was able to see and experience local bakeries and restuarants.

Brett was able to get some fantastic ideas and practical skills from his experience, which he will look forward to putting into the business when he returns.

  • 12/9/07 - Success at Orange Bread Show NSW

We hit the road this week with a 12 hour drive down to Orange in Western NSW for the annual Orange Bread Show. The competition standard was very high and as always the show was well organised and supported by members of the BIA NSW and local Allied Traders.

The major awards were again dominated by the Creative Crusts Team, with Most Successful Bread Exhibitor, Champion Loaf of the Show, Champion Artisan Loaf, and 15 y/o 2nd year apprentice Ryan Cave not only winning the apprentice section, but his Wholemeal Cob went on to win Champion Wholemeal loaf of the Show.

Top effort also by 2nd year apprentice Tim Dillion for winning the Sourdough section and both apprentices had a number of placings in the open sections against far more experienced competitors.

Brett Noys Novelty Section entry of a Cornucopia took first place and was featured in local TV news coverage.

 

  • 8/8/07 - Creative Crusts take Honours at Royal Queensland Baking Show

Following hot on the heels of Brett Noy's Australian Artisan Cup win the Creative Crust Team took all major awards at the Royal Queensland Baking Show.

Champion Loaf of the Show, Most Successful Bakery, Show Grand Champion, Champion Meat Pie, Champion Commercial Bread, and a special mention, 15 y/o Apprentice Ryan Cave Champion 1st and 2nd year Apprentice, Ryan also beat more fancied rivals to win the 3rd and 4th year bread section.
